Lemon Grilled Asparagus

Put your grill on a high heat. Place the washed asparagus (woody ends snapped off) on the grill pan rack. Turn and lightly char on both sides until just tender (roughly 2 to 3 minutes on each side).

Whilst the asparagus is cooking, find a bowl to fit the asparagus spears.

To make the dressing, put about a tablespoon of olive oil, about two tablespoons of lemon (or lime) juice, a good pinch of sea salt and freshly ground pepper to taste.

When the asparagus is ready, lightly toss in the dressing you have created and serve hot as a vegetable in a main course or as a healthy snack.

It is great on a piece of wholegrain toast accompanied by a little strong grated cheese or some lean ham.

TOP TIP: it’s great when barbequed too
